Spatchcock poussin marinated in extra virgin olive oil & peri peri spice
Method of preparation
Remove from the bag & place on a tray in a preheated fan oven at 180C fan, std oven 200C, gas mark 6 for for 25 mins, until cooked to the bone & juices run clear. Leave to rest for 5 minutes before serving.
Remove from the bag & wrap in kitchen foil, keeping the chicken flat.
Braai over a medium heat for 25 minutes, turning once half way through.
Remove the kitchen foil and place back on the BBQ for 5-10 minutes longer, turning regularly.
Ensure the chicken is cooked to the bone & juices run clear.
Rest for 5 minutes before serving
